Egg Roll?

Well, sort of. This is a variation of something my mom used to make for me years ago. Simply, it is ground beef and cheddar wrapped into a egg roll and deep fried. The ground beef is seasoned with some BBQ sauce and the final product is dipped in ketchup. It's like a deep fried burger.

Fettuccine Crab Alfredo with Diced Tomatoes

Here's a twist on a quick meal. Everything needed to make this I got at Walmart. I used a jar of alfredo, didn't make it from scratch. Used a package of blue crab, cheap and easy. I even used a can of diced tomatoes. Nope, I couldn't bring myself to slice a tomato. Like I said, it's a twist on a quick meal. If you wanna make everything from scratch, be my guest. I choose to go quick with this one. It was yummy, as is everything I have posted here so far. Add a little garlic bread and you got a meal.

Brizza!

What is Brizza? Well it's Breakfast Pizza. Once again, credit has to go to my now fiance for this creation. Brizza makes me very happy. When it comes to pizza I have a second stomach. I can eat way more than I should. I also love breakfast, but very rarely have time for it in the mornings.

If you need instruction on how to make this, it's not hard. Take some pizza dough, spread country gravy on it, add scrambled egg, bacon, sausage, and shredded cheese. Then bake. The final product tastes a lot better than this picture looks. This is a work in progress, it was not perfect, but tasted great!

We are already thinking about variations like adding chorizo and refried beans.

Best.Lunch.Ever

So in Sparks (and a location in Reno), there is a place called Scooper's. Scooper's is a old time drive up that is super crazy popular during Hot August Nights. So popular you can forget about going there during that week. But if you are around any other time, you should try this place out. Most importantly, you should try the Mighty Mike or the Bad Dog (pictured here). The Mighty Mike is a 1/4 all beef hot dog, stuffed with cheddar, wrapped in bacon, and deep fried. It then gets garnished with mustard, mayo, and onions (onions not pictured). The Bad Dog is the same thing except it is a polish dog with pepper jack, my favorite, which is why it gets pictured.

Add a side of chili cheese fries and a Oreo milkshake and you have the best lunch ever.

I once emailed that douche Guy Fieri to put Scooper's on Diners, Drive-ins, and Dives. He brought the show to Reno. Then went somewhere else... prick.

I'm sure the other place is good, I haven't tried it yet.

Eat Your Heart Out Chevy's

So what we have here is a creation from a couple sources. First being my wonderful girlfriend who came up with the idea. And a shot out to our friend Kelly for giving us the white sauce recipe. I present BBQ Pulled Pork Enchiladas.

We had left over BBQ pulled pork one night and decided to make enchiladas. What had started of as a way to finish off leftovers is now a new favorite. If you need to know how to make pulled pork let me know, it's simple with a crock pot and some Root Beer.

If you want to make it: Wrap pulled pork into tortillas. Place in baking pan. Cover with white sauce, which is a 50/50 mix of cream of chicken soup and sour cream. Then cover with cheddar cheese. Bake 350 for 25 minutes. You can use either flour or corn tortillas, both work well, use whichever you like better. We usually add some jalapenos for favor/heat.

Like I said this has become a new favorite. This is what Tex-Mex should be. I am not a big fan of Chevy's. I basically like the margaritas and the chips and salsa; and that's it. There is nothing else on the menu that is good to me. Maybe someone from Chevy's will read this and put my enchiladas on the menu. At least it would give me a reason to go get another great margarita.
